Saijou さいじょう , translated to be “the very best one”, is one of the best varieties around for making half-dried (anpo) persimmons.

The Saijo persimmon is an old Japanese variety that is ranked as the best tasting persimmon by gourmets. Wonderfully sweet flesh comparable to the flavour of honey. 

The fruit has very few seeds, which makes it ideal and convenient to savour.  As it ages and ripens under the sun, it brings out the rich flavour and high sugar content, making the yellow flesh fruit flavourful and tasty.
